Chia seeds are one of my favorite superfoods. I try to eat at least one serving every day due to their omega-3 fatty acids and the ability to keep you feeling fuller longer. Chia seeds can absorb up to 10 times their weight in water and forms a gel like substance around it. You can put chia seeds in pretty much anything but my favorite thing to make with these little seeds is pudding!
All you need to make chia seed pudding is:
4 Tbsp chia seeds
1 Cup almond or coconut milk
Then, you can sweeten it however you want! I use unsweetened vanilla almond milk so I usually add 1 tsp of vanilla extract and 1Tbsp of all natural maple syrup to sweeten mine. Sweet drops are always good for this recipe as well. The flavor is up to you!
Once you have mixed and sweetened your chia seed pudding, put it in a jar and refrigerate for at least 12 hours. You will know when the pudding has set because it will be thick and creamy. Chia seed pudding is great for breakfast with some fresh fruit or as dessert with dark chocolate and light whip cream! I usually end up keeping it in the fridge and reaching for it when I feel the need for something sweet. It definitely satisfies my sweet tooth! Enjoy 🙂
**If you really want to make a dessert out of this recipe, switch vanilla almond milk to dark chocolate instead. Even better than ice cream! and guilt free ;)**
