Pumpkin Spice Overnight Oats

It’s Fall.. so that means pumpkin! With Halloween just around the corner I was feeling extra festive this week. I have been really into making my breakfast before bed so I have something healthy and ready to go right when I wake up (which lately has been on the late side.) To avoid grabbing a breakfast sandwich at Starbucks or an unhealthy protein bar from the campus store I have discovered that overnight oats are a great option. They are extremely easy to make and they are already done and ready for you to eat right when you wake up in the morning! What is better than that?!

This week, I decided to make Pumpkin Spice Overnight Oats. Here’s what you’ll need:

1/4 cup oats (I used gluten free!)

1/4 cup pureed pumpkin

1/2 cup almond milk (or milk of choice)

Dash of pumpkin spice

(cinnamon, nutmeg, and ginger)

*Optional* natural sweeteners

Combine all of these ingredients in a mason jar or some kind of jar with a lid and leave overnight in the fridge. When you wake up, grab your oats and enjoy either cold and straight from the jar or warm it up in the microwave and add a dash of cinnamon (my favorite.) It’s that simple 🙂 Hope you enjoy this festive morning treat!

All together, this breakfast has around 140 calories and 7g of protein. Not a bad way to start your morning 😉
