I don’t know about you, but there are many mornings where I just do not have the time to whip up a big breakfast and I find myself grabbing any granola bar I can find. I am a big fan of Cliff Bars but I realized they really can’t be that hard to make myself. So, I threw
together these Banana Oatmeal Breakfast Cookies and I am never looking back! They are delicious and filled with trusted ingredients that will keep you energized throughout your morning. I make a huge batch of these and keep them in the freezer. I take a few out each week and they are the best option when running out the door (and pair perfectly with coffee.) These “cookies” took 10 minutes to prepare and are baked and finished within 20. These are also gluten free, peanut free, soy free, and egg free! ENJOY!
What you need:
2 Ripe Bananas, Mashed
2 1/4 Cups Rolled Oats (Gluten Free!)
1 Cup Almond Butter
1/4 Cup Pure Maple Syrup
1/3 Cup Dark Chocolate Chips
1 tsp Cinnamon
Pinch of Salt
Combine ingredients in large mixing bowl and place on lined or greased baking sheet. Set oven to 325 degrees and bake for 15-20 mins or until edges start to brown.
Love this! Same way, prepping big breakfasts is often too hard in the morning. I’m going to make these this weekend.
